What’s so great about homemade chicken stock anyway?

As Scott and I have moved in and out of apartments and houses over the years, there is one tradition that we’ve stuck to every time. As soon as we can get the kitchen settled into some semblance of normalcy, we pull out the stockpot, fill it with chicken bones and aromatics, and start a batch of chicken stock. As it simmers, the homey aroma twists and turns through the house, filling every nook and cranny with the smell that epitomizes “home” for us.

As I was going through the same process at the restaurant a month or two ago, I had a realization. There are some people in this world who just don’t make their own chicken stock at home. You can give me every reason in the book as to why you don’t make your own. And frankly…I get it! I don’t have time to do it myself these days. I’m busy, I’m running around, I’m getting dinner on the table, I’m packing lunch, I’m doing laundry, I’m reminding my daughter that coffee tables aren’t for standing upon…Juggling a toddler and a restaurant is about as much as I can handle. And who has time to make chicken stock at home anyway!!

So what we’ve done is this. We’ve made chicken stock for you. It tastes homemade. There is love it in. It smells good on the stovetop and it tastes like chicken stock ought to. So tell me, what will you make with it? A splash in your Holiday stuffing? A base for a slow-cooked pork stew? Soup to warm your soul on a winter’s eve? The possibilities are endless.

Fresh off the stove, we pack the chicken stock into 1-quart containers and freeze them. Just defrost and start cookin’.
